Shun Classic DM0718 Professional Cutlery - Santoku DM0718

A santoku is a Japanese all-purpose kitchen knife. Like a chef’s knife, the santoku is used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, the name refers either to the three types of foods it works well with—vegetables, proteins, and fruit—or for the three types of cuts at which it excels—slicing, dicing, and chopping. Hollow-ground indentations on the blade help reduce friction so the blade glides through the food more easily. When Sun first introduced the Classic Hollow-Ground Santoku to the market, it was named “Kitchen Knife of the Year” by Blade magazine.

This stunningly beautiful line of classic cutlery features the good looks and superb performance of Damascus steel, without any rust problems that you'll find with regular Damascus blades. Their excellent edge geometry reduces blade-to-food sticking, and also benefits the chef with faster prep times and less fatigue. The blades are crafted from a unique combination of VG-10 stainless steel that is clad with 16 layers of SUS410 high-carbon steel on each side. The result is a 33-layer rust-free blade that is not only beautiful - but incredibly sharp and strong. This VG-10 "super steel" is composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon, and Vanadium.

The Shun Classic series feature ebony-black PakkaWood handles, accented with stainless steel bolsters and end caps, that are as distinctive as their blades. Their uniqueness is their "D" shaped handles, which rest precisely in the curve of your fingers as they curl around the handle. This subtle feature, is not only clever, but extremely practical. They balance perfectly, with the balance point just ahead of where the handle sweeps out of the blade. The Shun Classic series is also NSF approved for commercial kitchens.
