Shun Classic DM0716 Professional Cutlery

This stunningly beautiful line of classic cutlery features the good looks and superb performance of Damascus steel, without any rust problems that you'll find with regular Damascus blades. Their excellent edge geometry reduces blade-to-food sticking, and also benefits the chef with faster prep times and less fatigue. The blades are crafted from a unique combination of VG-10 stainless steel that is clad with 16 layers of SUS410 high-carbon steel on each side. The result is a 33-layer rust-free blade that is not only beautiful - but incredibly sharp and strong. This VG-10 "super steel" is composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon, and Vanadium.

The Shun Classic series feature ebony-black PakkaWood handles, accented with stainless steel bolsters and end caps, that are as distinctive as their blades. Their uniqueness is their "D" shaped handles, which rest precisely in the curve of your fingers as they curl around the handle. This subtle feature, is not only clever, but extremely practical. They balance perfectly, with the balance point just ahead of where the handle sweeps out of the blade. The Shun Classic series is also NSF approved for commercial kitchens.

    Shun Classic 4" paring knife

    I own a set of knives that includes a paring knife. There is something about the design of the paring knife in this set that doesn't work; specifically it won't hold an edge for very long. I suspect it is the blade geometry. So I have been searching for a good paring knife for a long time. Since I purchased this knife I have been totally satisfied with it. It cuts with virtually no resistance at all. It is easy to use, has a comfortable handle, and it is a pleasure to use. I know in time it will lose the edge it came with, but fortunately lately I have a Wicked Edge sharpener, so I can set it to the precise 16 degree angle that this blade requires. This is there last paring knife I will ever need.
