Sometimes just the right amount of flex in your blade steel makes filleting fish easier. The knife conforms to the ribs of the fish, removing meat from the bones quickly and easily. Removing skin from meat is easier, too. It works well fro boning and trimming out poultry and other meats as well. The Shun Classic 7" Flexible Fillet knife is made of AUS8A, a high-carbon stainless steal that offers strength, hardness, and wear resistance, as well as a small amount of flex.
The Shun Classic series feature ebony-black PakkaWood handles, accented with stainless steel bolsters and end caps, that are as distinctive as their blades. Their uniqueness is their "D" shaped handles, which rest precisely in the curve of your fingers as they curl around the handle. This subtle feature, is not only clever, but extremely practical. They balance perfectly, with the balance point just ahead of where the handle sweeps out of the blade. The Shun Classic series is also NSF approved for commercial kitchens.
