The Al Mar "Ultra-Chef" models, classic in design, offer state of the art cutting performance. Each blade is 33 individual layers of stainless steel - 16 layers each side plus the center layer os VG-10 Cobalt stainless steel. Each blade is hardened to 60-62 on the Rockwell "C" scale. These knives are incredibly strong, light in the hand, perfectly balanced and extremely sharp. The handles are made from select grade Cocobolo, which has long been considered one of the world's most beautiful exotic hardwoods. The Ultra-Chef line - arguably, some of the finest knives made today. Each knife is individually gift boxed.

    Beautiful and sharp

    First off, great service from cutlery shoppe, they both answered my e-mail and shipped the item quickly. Now for the knife. It is absolutely beautiful, the wood handle looks amazing, the color goes well with the blade tone, and it looks balanced (aesthetically). This is my first damascus steel knife, and the layering looks awesome. The knife is very sharp, cuts very well, and feels nice in my hands (the handle is pretty thin, which I like). It's a great utility knife in my beginner opinion, I use it for paring as well as slicing. It only has two cons in my opinion, first the handle finish could be better. The transition between the wood and the steel is not very smooth through out the handle. Second, this is in all japanese kitchen knives (I think), but the cutting edge goes all the way back (not like in European knives which have a heel), I knew this one had such a blade, but because the blade is not tall (that is expected since it's 6") and very sharp you can get small cuts if you are not careful and barely touch that point. But again, overall amazing piece, and great place to shop at (best price I found for it).
